Banana-Chocolate Chip-PB Muffins

I am a huge fan of banana mixed with chocolate. I am also a huge fan of banana mixed with peanut butter. In the past, I've tried out recipes that utilize both combinations, but never all three ingredients. This idea came to me spur of the moment, when another recipe of mine didn't quite turn out the way I wanted it to. I had to come up with something delicious and creative on the spot, while also making do with the ingredients I had at home. I adapted and combined two recipes in order to make a new creation: a banana chocolate chip muffin with a peanut butter filling in the middle. Aside from people who are allergic to nuts, or those who hate banana, this recipe will be a guaranteed hit with any crowd.


-2 cups all-purpose flour
-1/2 tsp salt
-1 1/2 tsp baking powder
-1/2 tsp baking soda
-2 large eggs
-1 cup ripe mashed banana (around 4 bananas)
-1/4 cup vegetable oil
-1/3 cup granulated sugar
-1/3 cup brown sugar
-2/3 cup sour cream
-2 tablespoons almond milk
-1 tsp vanilla extract
-1 cup mini semi-sweet chocolate chips

-3 Tbsp earth balance vegan butter, softened
-1 cup creamy peanut butter
-2/3 cup powdered sugar


1. Preheat oven to 425 F.

2. Line 12-14 muffin cups with liners.

3. In a medium bowl, mix the flour, salt, baking powder and baking soda together.

4. In another bowl, whisk the eggs, then add the remaining ingredients.

5. Combine the wet mixture with the dry mixture and mix well.

6. Set aside.

7. To make the peanut butter filling, beat the earth balance butter until smooth and fluffy. Add the peanut butter, followed by the icing sugar. Beat until well incorporated.

8. Scoop the muffin mixture into the liners until 1/3 full.

9. Scoop 1 Tablespoon of the peanut butter mixture into the middle of each muffin.

10. Pour another layer of the muffin mixture into each liner until each muffin is around 2/3 full.

11. Bake for 8 minutes and then reduce temperature to 350 F. Continue to bake for another 6-10 minutes, or until a toothpick comes out dry.

12. Let cool, and enjoy this peanut butter-banana-chocolatey goodness!
