Buffalo Cauliflower Bites

Lately I've been loving the recipes from Kristin Cavallari's new book, Balancing in Heels. I've been so into them that I decided to download her app to get more healthy meal ideas - and boy am I ever glad I did! A few days ago I decided to try making the Buffalo Cauliflower recipe she posted, and it was even more delicious than I had anticipated. I changed a couple things from Kristin's recipe, but I'm sure big of our versions produced similar results. This recipe is a perfect healthy option for all of those BBQs that are about to come around this spring and summer.

Cauliflower Bites
-2 cups almond milk
-2 cups whole wheat flour
-2 teaspoons garlic powder
-2 tablespoons coconut oil
-2 heads cauliflower

Buffalo Sauce
-2/3 cups hot sauce
-2 tablespoons Earth Balance vegan butter, softened


1. Preheat oven to 450 F.

2. Cut the cauliflower into bite sized pieces, excluding the core.

3. In a large bowl, combine the flour, almond milk, garlic powder and coconut oil.

4. In a large ziploc bag, combine the cauliflower and the mixture and shake until the cauliflower is coated. You may need to divide the cauliflower and the mixture into two separate bags in order to coat them properly.

5. Distribute the cauliflower onto a foil lined pan and bake for 20 minutes.

6. While the cauliflower is baking, combine the hot sauce and vegan butter in a small bowl.

7. After 20 minutes, brush the cauliflower with the hot sauce mixture, making sure each piece is coated but not soaked.

8. Bake for an additional 10-15 minutes, or until cauliflower is crisp.

Tip: Pair these with a healthy, vegan ranch dip for the ultimate combo. I dipped mine in RawFoodz Wild Ranch dip - it's 100% healthy and guilt-free. You can find it in Toronto at Whole Foods, and most health food stores. I even found some at the Cityplace Sobey's.
