Green Banana Muffins

Normally when I post a recipe, it is something I've come up with on my own or adapted from a recipe I've come across online. I like to play around in the kitchen, but every so often I come across a delicious recipe that I feel needs no altering whatsoever. I discovered these muffins while browsing through Kristen Cavallari's new book, Balancing in Heels, in Indigo. Almost immediately, I ran home to try it out and was even more pleased with the result than I had anticipated. As someone who needs to make sure I get enough iron and green veggies, this recipe is perfect. It may not be a substitute for a salad, but these muffins will give you a kick of green, as well as satisfy your sweet tooth.

The first time I made these, I followed the recipe exactly as written. The second time I used a mix of kale and spinach for the greens, and a mix of honey and maple syrup instead of just the maple syrup. This is a recipe that you can feel free to play around with.

-2 cups spelt flour
-2 teaspoons baking powder
-1/2 teaspoon baking soda
-1 teaspoon fine grain sea salt
-1 bag (6 oz) baby spinach (about 4 cups)
-3/4 real maple syrup
-1/2 cup plain unsweetened almond milk
-1 flax egg*
-1/4 cup unsweetened applesauce
-1 1/2 teaspoons vanilla extract
-1 1/2 cups mashed banana (around 2-3 bananas)

*Make the flax egg before you begin by mixing 1 tablespoon of ground flax with 3 tablespoons of water and set aside for 15 minutes.


1. Preheat oven to 350 F. Line 18 muffin cups with paper liners.

2. In a large bowl, combine flour, baking powder, baking soda and salt.

3. In a blender or food processor mix together the spinach, maple syrup, almond milk, flax egg, apple sauce and vanilla until the mixture is completely puréed.

4. Add the wet ingredients to the dry ingredients, then add and combine the banana.
5. Fill each muffin cup about 3/4 full. Bake for 20-25 minutes or until a toothpick comes out clean. Let cool at least ten minutes.
